POP to IMAP procedure

I have never used IMAP, for PO or other mail server/mail client.  I understand it is like AOL's mail; the mail always stays on the server and is not downloaded to the client.  If this is so, I many want to try it since I'm using several computers at different locations and my mail history is all over the place.
Are there any downsides?  Any procedure to convert from POP accounts to IMAP?  Or do you just set the client for IMAP and it works in a client/server manner?
