Please correct me if I am wrong but should this not be:

Domain Re-write Table:
xxxx  delete this line -> mydomain.org:Xander.local.mydomain.org <- delete
this line xxxxxx
vhost1.org:mydomain.org
vhost2.org:mydomain.org
vhost3.org:mydomain.org

I am not sure why you have that first line?

Do you have your DNS set up to send mail to the mydomain.org server?
