Apple's mail.app is awful awful awful with IMAP. You might want to 
try another client and see if it works better. I personally prefer 
Netscape's Mail client. There is a standalone version of this project 
(just mail and news, no browser) called Thunderbird. Thunderbird's 
project page is here:
