The postmaster account should still be there and be fine, it's access privs
are just set to be local only by default. Specifically, it's about 1/2 way
to 2/3rds the way down the account page:

Lock Account to prevent POP3 and IMAP access and configuration via Web or
E-Mail?:
Yes No Help
When the account gets reset, it changes to Yes - you need to set that back
to No.
How you do it on a headless machine without Timbuktu, I'm not sure (I always
have Timbuktu on my machines). Hopefully Tenon will answer - I would suggest
contacting them directly since it's an important thing. I'm sure they have a
trick or two.
