Glenn,
You should have a look at your StartupItems folder. The clamav system
is launched through a startup item: /Library/StartupItems/clamav/
When you remove that folder, then clamav won't start after a reboot.
Also remember to edit your SMTP-filters to remove the the clamav
module from the post.office configuration.
