I have the same setup (well used to) and never had any problems. I think
there is thinking problem on your side here.

I have a form on my page where people can subscribe to our newsletter which
is done by macjordomo. I have a [sendmail] tag sending a message to
macjordomo, trough SIMS, to subscribe or unsubscribe. This all works great.

You don't even have to change or setup any special variables or email
addresses, except the one for macjordomo to check for commands.
