We don't really like to talk about that invisible, secret UNIX inside WebTen, but if you want an editor, why not use a Mac editor like BBEdit. Note that BBEdit even comes configured with options to save file with UNIX-style carriage return/line feeds. The tight integration with the Mac file system gives you the flexibility to use Mac tools on "UNIX" files.

Well, given the comment above, I suppose the following question may be out of line, but I'd like to ask anyway. I see the following lines in the .profile file:

case $TTY in
    /dev/console )
        # Mount desired NFS volume(s) to desktop for access by Mac apps
        #dtmount -t nfs -o dtnfs host:remote_path local_path
        #exec /usr/bin/wind
        ;;
    /dev/win* )
        ;;
    * )
        #stty crt
        ;;
esac

   Does this imply that WebTen supports NFS mounting? Is the performance
   good enough to make it a useful tool for serving remotely mounted
   resources?

The early versions of WebTen did, in fact, support NFS mounting. The idea was that webmasters might want to store their content on an OS X Server (nee Rhapsody) machine. And, yes, the performance with this kind of operation was fine. I don't think this aspect of WebTen has been tested recently, but it may still work. :-)
