You need to make sure the log file exists, or apache will not start, 
There will be a notification in the admin server and the error log, 
nothing is "bombing".

The virtual hosts would only appear to be missing because the file 
could not be parsed, make sure that your log formats are enclosed in 
quotes.

No, manually configuring the conf file with the data you entered 
would cause the same problem of the server not starting.

Technically you should be able to see the log formats from the server 
defaults, but not from other virtual hosts. This was overlooked and 
will be added in a future update. In the meantime you can just copy 
them into the virtual hosts from the server defaults.
