No, In fact you should not be root.  you should be an admin user.

Well, apple's  OS X Server does not handle MIME types in the same way 
as the default apache installs.  It uses an include file rather than 
a mime.types file.  Some beta users had some problems with this when 
iTools was installed.  the current version should fix that problem. 
The main issue users will probably have is with user management. will 
they want to set up FTP with the more restrictive (and more secure) 
iTools users or go in another direction.
For the most part everything should work though.
