I heard that OS X came with all services off, and was basically very
secure. This came off the EIMS list - any comments? Has anyone been
successfully hacked yet?

I agree. Installing Mac OS X on a machine connected to the
Internet means you have to consider Unix Internet security, at the
very least you have to make sure no services have been turned on.
And unfortunately Mac OS X still has SunRPC on by default (port
111), and there is no easy way to turn it off (I think this is
because it is used by NetInfo, and there are NeXT people at Apple
that think NetInfo is a good thing for some unknown reason, I wish
that could be easily turned off as well). SunRPC is the most scanned
for thing on the 'net as it easily identifies a lot of unix/linux
boxes.
