Figured this out on my own, sorry to clog the list with my somewhat off-topic question.

When the OS X 10.1 CD installer _first_ launches, "Disk Utility" is available from the menu at top. From that utility, I was able to easily reformat the drive.

The "Disk Utility" menu option vanishes (as opposed to being merely dimmed in the menu) at the subsequent screen in the wizard where I got stuck. Hence my confusion.
