I usually leave DEFAULT untouched, so I can browse the Apache documentation when necessary. Then I would setup other virtual hosts like so:

example.com
192.168.1.2

example2.com
192.168.1.2

When I want to access example2.com, I must access by using the example2.com as the URL. Typing 192.168.1.2 will only bring me to the DEFAULT virtualhost.

You can modify the DEFAULT root document to another folder and setup a index to point to different virtual hosts like so:

http://192.168.1.2/example.com
http://192.168.1.2/example2.com

Then make alias for DEFAULT virtual host to have alias /example.com point to the DocumentRoot of the example.com.

This will give the people ability to access your virtual hosts by using the same IP address.
