iTools is not a website creation tool, it just does administration. You'll need to use something else to get the data to the website. I usually use an FTP client like Transmit, but I'll also mount the website directories on my local system and work on them using BBEdit. Another way is to use the Terminal or an xterm to access the remote server and edit the files with vi, pico or emacs. And there are programs like MacroMedia's DreamWeaver that will let you just deal with the look and feel of the pages, so you don't have to worry about the HTML as much.
